Derby harks back to a 17th century tradition of adding Sage
to cheese to capture the herb’s health giving properties.
This style was later extended to other local herbs.
The taste strengthens with age. There
have been many pale imitations of this wonderful cheese and
for true taste and flavour Fowlers of Forest Farm offer the
real McCoy.
For full taste mature for six months.
Ripens in one to three months. 45% fat.
